Blackberry Apple Cobbler
Cobbler, the kind you eat, not the man that fixes your shoes, if one of my favorite simple desserts to make. The possibilities are endless. The combinations are heavenly! If you haven't enjoyed a good cobbler before, it's basically the filling you get with a pie, without all the work!
The one we will make today is apple blackberry, but you can substitute just about ANY fruit you desire.
First let's peel the apples, and slice them into thin slices. If your apples are extra large, I would recommend cutting the slices in half. The more uniform in size all your fruit is, the better it will cook and thicken.
Place the slices in a bowl and add your dry ingredients: for about 3 cups fruit, you will need 1/2 c. sugar, 1 Tbsp. cornstarch or flour, 2 tsp. cinnamon, pinch of salt. Stir it all to coat fruit well.
Now for the crumb topping (which the fruit is basically just the carrier of...the real reason we eat cobbler!) If you have a mini food chopper or food processor, this step is so easy. If not, just add all the ingredients to a small bowl and use a pastry cutter or 2 kitchen knives. If using two kitchen knives, you will use both hands and cut toward each other, the blades slicing past each other with each cut. This will eventually make little pea size pieces of crumble.
Place 1 stick COLD butter, sliced in small cubes, 3/4 c. brown sugar, 1/2 c. flour, 1 c. quick oats (uncooked) into processor and pulse until small crumbles.
Pour the crumb topping onto the fruit, being careful to press down and form a βcrust.β Bake for 30-40 minutes, or until you see little bubbles coming up from the fruit. Remove and cool for at least 20 minutes before digging in. I highly recommend serving with Breyerβs Vanilla Ice Creamβ¦
