Fruit Salsa and Cinnamon Chips
Whether itβs a Cinco De Mayo celebration or a reason to use up leftover fruit, hereβs a good dessert-ish idea, and it couldn't be more simple to prepare.
We will start with the cinnamon chips. Preheat oven to 350. These are made with tortillas. I used flour, but it works with corn as well, if you have a gluten sensitivity. The small size (6 or 7') work the best, because you can cut them in 6. Any bigger and they become longer triangles that break too easily. Slice each circle in half, then each half in thirds.
If you do not have a handy shaker for cinnamon and sugar mixture, then first of all ...LAME and secondly I would recommend you do that, if your family loves all things cinnamon, like mine does....I digress. If you don't have a shaker, then you will need a small bowl and mix together your sugar and cinnamon with a 4-1 ratio: 4 parts sugar to 1 part cinnamon. I would start with 1/4 cup of sugar and 1 Tbsp. of cinnamon, stirring gently with a fork. Set aside.
Lay out your triangles on greased cookie sheets, in a single. Melt 1/2 stick of butter (not margarine) and brush very lightly onto the triangles and sprinkle with cinnamon/sugar. If no shaker, you will need to pinch a little between your fingers and sprinkle it all over and repeat. Bake them for 10-12 minutes and watch carefully. They should be lightly golden and crisping up. If you are doing 2 pans at a time on separate shelves, switch the pans at about 7 minutes. Once you remove them to cool, it's not frowned upon to sprinkle even MORE cinnamon sugar....
Now let's make the fruit salsa while the chips cool. This is such a general "recipe" that it's not even fair to call it that. Let's call it a "guide." You can use absolutely any combination of fruit you want. Mine changes every time I make it, depending on what's in the fridge and ripe. For it to feel like salsa rather than a fruit salad, keep the pieces very small. I used strawberries, raspberries, blackberries and crushed pineapple in this one. But Kiwi, oranges, or grapefruit would be a nice addition too. If you are not using any citrus, I would add a splash of lemon or lime juice or even a bit of pineapple juice for a little kick. There's no sugar added (cuz we got plenty on those chips!!) so it's fairly guilt-free!
